Description

This Napoli-style sauce leans on deeply caramelized onion sweetness rather than heavy herbs. The overnight rest lets flavors round out; blending next day gives a velvety, clingy texture perfect for pasta or pizza base and preserves red color.

Steps

  1. Caramelize

    Add sliced onions to a wide pot over very low heat. Cook, stirring often, 35–45 min until deeply sweet and golden.

    (If the pan runs dry, add a splash of water to deglaze — keep it low and gentle.)
  4. Build Flavor

    Stir in garlic paste 30 sec. Add tomato paste and cook 2–3 min until brick-red and sweet.
  6. Simmer

    Add chopped tomatoes, sugar, salt, and the bouquet garni (bay + peppercorns). Barely simmer, uncovered, 45–60 min, stirring occasionally.
  8. Basil & Rest

    Remove from heat, stir in basil, cover, and refrigerate overnight for flavors to round out.
  10. Blend & Finish

    Next day, remove bouquet garni. Blend until silky. Taste and adjust salt/sweetness. Reheat gently.
