Description
This Napoli-style sauce leans on deeply caramelized onion sweetness rather than heavy herbs. The overnight rest lets flavors round out; blending next day gives a velvety, clingy texture perfect for pasta or pizza base and preserves red color.
Steps
Caramelize
- 1Add sliced onions to a wide pot over very low heat. Cook, stirring often, 35ā45 min until deeply sweet and golden.
- 2(If the pan runs dry, add a splash of water to deglaze ā keep it low and gentle.)
Build Flavor
- 3Stir in garlic paste 30 sec. Add tomato paste and cook 2ā3 min until brick-red and sweet.
Simmer
- 4Add chopped tomatoes, sugar, salt, and the bouquet garni (bay + peppercorns). Barely simmer, uncovered, 45ā60 min, stirring occasionally.
Basil & Rest
- 5Remove from heat, stir in basil, cover, and refrigerate overnight for flavors to round out.
Blend & Finish
- 6Next day, remove bouquet garni. Blend until silky. Taste and adjust salt/sweetness. Reheat gently.
