Description
Horiatiki is all texture: ripe tomatoes, crisp cucumber, onion bite, green pepper crunch, briny olives/capers, and a slab of feta. The dressing is nothing more than good olive oil and a little red wine vinegar. No lettuce. No fuss.
Steps
Vegetables
- 1Layer tomatoes, cucumber, red onion, and green pepper in a bowl.
Briny bits
- 2Add the Kalamata olives and capers.
Season & dress
- 3Season with oregano, dried spearmint, and salt.
- 4Drizzle over the olive oil and red wine vinegar.
Feta on top
- 5Place the feta block on top of the vegetables.
Drizzle more olive oil 🤭
Finish
- 6Scatter the broken paximadi just before serving to keep it crunchy.
