Steps
Whisk the base
- 1In a bowl, whisk eggs with sugar, salt, and vanilla seeds. Add flour and milk; whisk until completely smooth.
Rest & strain
- 2Whisk in the cooled melted butter. Rest 20–30 min. Strain through a fine sieve for a silky batter.
Cook
- 3Heat a non-stick pan lightly brushed with butter. Pour ~60–70 g batter, swirl to a thin even layer.
- 4Cook 40–60 s until the underside is spot-golden with lacy edges; flip and cook 10–20 s more.
Keep soft
- 5Stack on a plate and cover with a clean towel to keep them supple. Serve warm.
