Born from many late-night crêpe cravings, refined to perfection—real vanilla, lacy edges, soft and flexible every time. 🥞✨

Description

Classic, reliable crêpe batter for everyday use. Resting the batter relaxes gluten so the crêpes stay soft and flexible. 🕊️

Steps

  1. Whisk the base

    In a bowl, whisk eggs with sugar, salt, and vanilla seeds. Add flour and milk; whisk until completely smooth.
  3. Rest & strain

    Whisk in the cooled melted butter. Rest 20–30 min. Strain through a fine sieve for a silky batter.
  5. Cook

    Heat a non-stick pan lightly brushed with butter. Pour ~60–70 g batter, swirl to a thin even layer.

    Cook 40–60 s until the underside is spot-golden with lacy edges; flip and cook 10–20 s more.
  8. Keep soft

    Stack on a plate and cover with a clean towel to keep them supple. Serve warm.
